Hey friends! Let the games begin!!! ‘Tis the season, right? You know I’m all referring to the fact that Halloween, although fun, is just the one preview to the greater holidays of sweets, treats, and lots of good eats! And everyone’s starting to get geared up! I mean, with our busy lives and all, you gotta start early! Don’t even ask me how the last few days have been. I feel like I have barely had time to comb my hair. Luckily I’m a low maintenance kinda gal.
Anyhoo……we are so excited to be a part of the Bake Craft Sew Holiday Series 2014! This series is being hosted by Leigh Anne of Your Home Based Mom (the “BAKE”), Cindy of Skip to My Lou (the “CRAFT”) and Mique of 30 Handmade Days (the “SEW”). Today we are sharing an edible gift of Almond Roca that you can then share – find the full recipe at Your Home Based Mom. And that is, if you are willing to share. Just sayin’. ‘Cuz you might not want to, and I’m okay with that (I won’t tell or judge). Or you might want to, but just a fair warning that you should gift it fast, or it will all end up in YO BELLY! ‘Cuz it’s just that good.
This Almond Roca is really fairly straightforward in its ingredients and is way less expensive than the store-bought stuff (and did I mention, it tastes WAY BETTER as well? Super bonus). Seriously, there’s just five ingredients: granulated sugar, butter, corn syrup, almonds, and chocolate chips (we recommend Ghirardelli Dark Chocolate, but you can do any brand as long as it is chopped up, and you can go milk chocolate as well if that’s more your style.)
Now perhaps candy making sounds intimidating to you. But no worries. We’ve also included some important tips and tricks (along with pictures) to help you come out with the perfect batch! And we also have a couple specific kitchen tools that we love and highly recommend that help us achieve the perfect batch:
- Candy Thermometer (Digital or Traditional)
- Offset Spatula
And as we always say, practice makes perfect! (Good excuse to “test” it over and over….and over..you get the idea.) Once you get your hand down at these, you can try some of other wonderful giftable treats that we have here on the blog like our Soft Caramels, Peppermint Marshmallows, or a nice batch of Orange Pecan Biscotti to dip into some “Better than Starbucks” Caramel Apple Cider. Can you tell we have a lot of candy recipes? Yeah. I don’t know what that says about us, but take it for what it’s worth. We love sugar.

Have you ever used a Blendtec? I’m in love. I got one a couple of years ago after the founder of Blendtec spoke to my husbands’ law school class about a patent lawsuit they had been involved in (they were suing another well-known company for infringement, and long story short, they won).
