Barbecue Bacon Meatloaf Recipe

Barbecue Bacon Meatloaf

Ingredients

  • BBQ Meatloaf
  • Author: Tammy Blankenship
  • Recipe type: Classic Style
  • Ingredients:
  • 1 pounds and 1/ 2 ground beef
  • 1 egg
  • 1/3 cup barbecue sauce 1 tablespoon mixed in, remainder for topping, divided
  • 1/2 cup bread crumbs
  • 1 teaspoon mustard
  • 1 teaspoon beef rub
  • 1 splash worcestershire sauce
  • 1/2 onion diced
  • 1/2 red bell pepper diced
  • 2 cloves garlic minced
  • salt and pepper to taste
  • 4 slices cooked bacon

Instructions

  1. Preheat oven to 350 F.
  2. Saute onion and pepper for 5 minutes, or until tender.
  3. Mix meat, egg, 1 tablespoon bbq sauce, worcestershire, bread crumbs, mustard, beef rub, onion, bell pepper, garlic, salt and pepper.
  4. Shape into loaf and place in pan.
  5. Spread barbecue sauce on the top. Cover with strips of lightly cooked bacon.
  6. Bake for 45-60 minutes or until thermometer registers 160 degrees.
  7. Let rest for 5 minutes. Slice and serve.
