I love summer eating. It can be so fresh, light, and taste so delicious at the same time. For me, there is nothing like spending the morning outside rummaging through my garden to see if there are any ripe veggies for me to pick.
Corn is one of those vegetables that is like 10,000 times better fresh to me, so if I see it on sale, I buy it. When I came across this recipe, I knew it would be good.
Corn.
Avocado.
Bacon.
Did you say bacon?
I am sold. Bacon makes everything taste good dangit!
So if you are in the mood for a light, yummy lunch. Give it a go.

Fresh Corn Wraps
Ingredients
- 3 ears of corn shucked and boiled
- 2 Roma tomatoes diced
- 1 avocado cubed
- 3 slices of bacon cooked and chopped into half inch pieces
- 2 green onions sliced
- 1 head iceberg lettuce
- 1 tablespoon olive oil
- juice of one lime
- salt and pepper
Instructions

Once the corn has cooled slightly, use a knife and cut it off the cob.

Toss first 5 ingredients together in a medium bowl.

Top with olive oil, lime juice, salt, and pepper.

Toss lightly and serve in lettuce.
Recipe Notes
Lighten it Up:
Eliminate the bacon for a healthier version. (Although, I honestly think that's the best part!)
