When I lived in Alabama I used to scan through all the magazines at the local rec center while I exercised to find food inspiration. Occasionally, I would “borrow” a page (shhh! Don’t tell!) Probably not the best thing I ever did in retrospect, but I did it. (I only did it from the gym though, I swear. Can you tell I’m still feeling a little guilty?)
Well this honeydew salsa (that I’m featuring with grilled chicken today) I am pretty sure was inspired by an article I found in one of those magazines. This is a mild (if you skip the jalapeno pepper) salsa that pairs incredibly with a handful of things. The sweet honeydew with a hint of lime and topped off with ginger is heaven to the taste buds. It’s so refreshing to the palate. In fact, it’s so heavenly that I feel like it should be a guilty indulgence. How awesome that it’s not!
For a quick meal, throw the salsa on top of some grilled chicken. For a quick snack, throw it in a quesadilla. And when you just got the munchies, try it with some tortilla chips.
Grilled Chicken with Honeydew Salsa
Ingredients
- 4-6 pounds chicken breasts 2
- 1 1/2 cups chopped honeydew melon I use one small melon
- juice of one lime
- 1/4 cup cilantro roughly chopped
- 1-2 teaspoons fresh ginger zested
- 1/4 cup yellow onion minced
- 1 jalapeno pepper or other hot pepper, optional, finely diced
Instructions

Mix honeydew, lime juice, cilantro, ginger, onion and pepper. Salt to taste. Let the salsa sit in the sit on the counter while you grill the chicken.

Lightly brush the chicken with olive oil, salt and pepper.

Grill chicken until cooked. (I like to use a thermometer so I don't overcook it.)

Slice chicken and top with salsa. (We also love making quesadillas or just eating the salsa with chips.)
