Easy and Healthy Maple Cinnamon Roasted Sweet Potatoes Recipe

If you haven’t noticed, I looooove sweet potatoes.  Wouldn’t get within twenty feet of them, until I moved to Alabama.  Southerners know how to throw down some homemade sweet potatoes.  I fell in love with them when a sweet friend made them for Thanksgiving covered in a sweet, crispy, pecan crust.

These Maple Cinnamon Roasted Sweet Potatoes are a healthy reminder of that wonderful dish.  A sweet, crispy exterior, with a creamy inside!  So if you are craving a guiltless treat, try it out!

Maple Cinnamon Roasted Sweet Potatoes

Course side, Vegetable
Cuisine Quick 'N Easy
Prep Time 5 minutes
Cook Time 25 minutes
Total Time 30 minutes
Servings 2 -4 servings (as a side)

Ingredients

  • I large sweet potato peeled and diced
  • 1/8 teaspoon cinnamon
  • 1 tablespoon olive oil
  • pinch of salt optional
  • 1 tablespoon pure maple syrup

Instructions

  1. Preheat oven to 425 degrees F.
  2. Toss sweet potatoes in oil, cinnamon, and salt.
  3. Cook for 20 minutes, flipping once half way through.
  4. Gather sweet potatoes on pan with a spatula and pour on maple syrup. Toss together and spread back out.
  5. Bake for 3-4 additional minutes.
  6. Remove from oven and hot pan immediately (to prevent them from caramelizing too much).

    I love the sweet/salty combo. It’s like candied sweet potatoes without all of the effort! I think some of the simplest recipes are always the best as they can stand on their own. Yum!
