Healthy Apple Bran Muffin Recipe (Mini-Style)

Ingredients

  • 1/4 cup oil canola, coconut, light olive
  • 1 large egg
  • 6 tablespoons honey
  • 1/2 cup plain or vanilla greek yogurt
  • 1/2 cup white wheat flour
  • 1 cup wheat bran
  • 1 medium to large apple peeled and shredded or diced into small cubes
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • pinch salt
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat oven to 350 degrees F.
  2. Line a 24-inch mini muffin pan with butter/oil or muffin cups.
  3. Mix oil, egg, and honey in a small mixing bowl.
  4. Add flour, bran, baking powder, cinnamon, salt, and baking soda.
  5. Mix until combined.
  6. Add in shredded/diced apple and stir until combined.
  7. Distribute evenly into pan and bake for 10-12 minutes, or until middle springs back.
