Put diced onion and jalapeno into bacon grease over medium heat and saute until onion starts to become translucent.
Add garlic and saute one more minute.
Drain one of the cans of beans and add to onion.
Add the other 2 cans of beans (with liquid), lime juice, and cooked bacon bits to the pan.
Saute 5 to 10 minutes.
Puree with an immersion blender or carefully in the blender (letting the hot steam vent so that you don't have an explosion!).
Salt and pepper to taste.
Change it Up: In place of the jalapeno, add one chipotle pepper. Dress it Up: Top with shredded sharp cheddar cheese (you can place this under the oven broiler for a couple of minutes, if desired, to melt it and make it bubbly and delicious!)
