Light and Fluffy Oatmeal Pancakes - Yummy!

  • 1 cup buttermilk
  • 1 large egg
  • 1 tablespoon coconut oil melted, vegetable oil, or unsalted butter
  • 2 tablespoons maple syrup or sugar
  • 1/2 cup unbleached all-purpose or white wheat flour
  • 3/4 cup oats ground in food processor
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt


  1. In a medium mixing bowl, mix buttermilk, egg, oil/butter, and sugar/syrup.
  2. Add flour, oats, baking powder, baking soda, and salt. Stir until just combined.
  3. If batter is too thick, add 1 tablespoon water.
  4. Let batter sit for a few minutes while you preheat pan or griddle.
  5. Butter pan, scoop onto pan.
  6. Cook pancake until it gets slightly bubbly around the edge and flip.
  7. Let pancake cook on the other side for another minute or until cooked through.
