Old Fashioned Peanut Brittle

  • 2 cups granulated white sugar
  • 1/2 light corn syrup
  • 1/2 teaspoon salt
  • 1/2 cup water
  • 3 cups peanuts
  • 1/2 cup stick unsalted butter 1/4, at room temperature
  • 1 teaspoon baking soda


  1. Liberally grease a 10x16 inch sheet pan and set aside.
  2. In a medium saucepan (preferably NOT dark nonstick) combine sugar, water, corn syrup, and salt. Place over medium heat and stir until sugar dissolves.
  3. Boil mixture until it reaches 300 degrees on a candy thermometer or when you drizzle into ice water, candy forms hard strings.
  4. Remove from heat.
  5. Add nuts, and stir.
  6. Add butter and combine.
  7. Add baking soda, give it a quick stir and spread immediately onto sheet pan using 2 spatulas (or knives).
  8. Let cool at room temperature.
  9. Crack into pieces once cooled.
