Strawberry Nectarine Salsa

Ingredients

  • 3 medium tomatoes diced
  • 2 nectarines skinned and diced
  • 10-12 medium strawberries hulled and diced
  • 1 red onion or 1/2 red and 1/2 sweet onion, diced
  • 1 red bell pepper seeded and diced
  • 1/2 green bell pepper seeded and diced
  • 2 jalapenos seeded and diced
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • salt and pepper to taste

Instructions

  1. In a large bowl, mix together tomatoes, nectarines, strawberries, onion, bell peppers, and jalapenos.
  2. In a small bowl, combine lime juice and honey. Place in microwave and warm on low for about 15 seconds, or until warmed enough to stir together easily.
  3. Pour honey lime mixture over salsa. Stir to combine.
  4. Add salt and pepper to taste.
  5. Serve with tortilla chips, over meat (fish, chicken), or on whatever else that sounds yummy!

Recipe Notes

Change it Up:
Substitute mangoes or peaches (or a combination) for the nectarines.
Dress it Down:
This fresh salsa can get very juicy because of the juice in the tomatoes, nectarines, and strawberries. If you want to go less juicy, there are a couple of options. 1) You can simply drain the mixture after it has sat in the bowl for about 20 minutes. 2) Use a variety of tomatoes that is more firm (such as Roma). 3) Eliminate some or all of tomatoes.
If you don't want heat, eliminate the jalapenos.
