Change it Up:
If you don’t have buttermilk, add plain yogurt or cut your milk back by 1/4 cup.
If you want a fluffier waffle, separate eggs. Mix the yolks in with your dry ingredients. Beat whites with 1/4 teaspoon cream of tartar and beat until peaks form. Fold into batter and let sit 5 minutes before cooking.
For a sweeter waffle: add 1 more tablespoon of sugar and 1 teaspoon vanilla.
Dress it Up:
Substitute 1/2 cup of cornmeal for part of the flour and serve your waffle with chili.
