Fresh Corn Wraps

Ingredients

  • 3 ears of corn shucked and boiled
  • 2 Roma tomatoes diced
  • 1 avocado cubed
  • 3 slices of bacon cooked and chopped into half inch pieces
  • 2 green onions sliced
  • 1 head iceberg lettuce
  • 1 tablespoon olive oil
  • juice of one lime
  • salt and pepper

Instructions

  1. Once the corn has cooled slightly, use a knife and cut it off the cob.
  2. Toss first 5 ingredients together in a medium bowl.
  3. Top with olive oil, lime juice, salt, and pepper.
  4. Toss lightly and serve in lettuce.

Recipe Notes

Lighten it Up:
Eliminate the bacon for a healthier version. (Although, I honestly think that's the best part!)
