Whole Grain Churro Waffles

  • 1 cup buttermilk
  • 1 extra large egg
  • 1/2 teaspoon vanilla
  • 2 tablespoons butter melted
  • 2 tablespoons sugar or maple syrup
  • 1 cup white wheat flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • pinch of salt
  • 1/4 teaspoon cinnamon

For the coating:

  • 2 tablespoons butter melted
  • 3 tablespoons sugar
  • 1 teaspoon cinnamon


  1. In a large bowl, mix milk, egg, vanilla, butter, and sugar (or syrup).
  2. Add flour, baking powder, baking soda, salt, and cinnamon. Mix until just combined.
  3. Pour 2 tablespoons melted butter in separate bowl and set aside.
  4. Mix cinnamon and sugar in a bowl large enough to dip waffles in and set aside.
  5. Pour in 1/3 cup waffle mix into preheated and buttered waffle iron. Cook until crisped around edges.
  6. Remove from waffle iron and brush immediately with butter and dip in cinnamon sugar mixture.
