Coconut Cinnamon Waffles

Ingredients

  • 2 cups unbleached all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 tablespoons sugar
  • 1 teaspoon ground cinnamon
  • 3 eggs
  • 2 cups coconut milk
  • 1/4 cup canola oil

Instructions

  1. In a medium bowl, mix together flour, baking powder, baking soda, salt, sugar, and cinnamon.
  2. In a separate bowl, divide egg whites, simply adding yolks to the dry ingredients (don't stir yet until other wet ingredients have been added.)
  3. With a hand beater, beat egg whites until stiff peaks form.
  4. Add coconut milk and oil to dry ingredients bowl. Mix until combined.
  5. Fold in egg whites.
  6. Scoop batter in preheated, oiled (or buttered) waffle iron and cook until golden brown.
