Sweet Potato Hash Recipe with Sausage and Avocado

Ingredients

  • 2 large sweet potatoes peeled and diced into 1/2 inch cubes
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 1 large red bell pepper diced into 1/2 inch squares
  • 1 pound sausage (pork, turkey, chicken)
  • 1 large avocado diced

Instructions

  1. Preheat oven to 425 F.
  2. Toss sweet potatoes in olive oil, salt and pepper.
  3. Place sweet potatoes on sheet pan and roast in oven for 20 minutes. Flip them once after 10 minutes.
  4. Meanwhile, place sausage on a skillet and cook thoroughly. If wrapped in casing, slice into bite sized pieces.

  5. Add diced red bell pepper to sweet potatoes after 20 minutes. Roast for 5 more minutes. Remove from oven.
  6. Toss sweet potatoes/pepper mixture, sausage and avocado lightly. Salt and pepper to taste.
