Ingredients
Fresh Corn Salad

ears fresh corn
cooked and cut off cob
2
pieces
Roma tomatoes
diced into small

pieces
red pepper
diced into small
1

can black beans
black eyed peas are also delicious this salad, drained and rinsed
1/4
cup
cilantro
roughly chopped
2-3
cloves
garlic
minced
1
avocado
diced into small squares
1
tablespoons
to 2 olive oil
juice of 1 lime
salt and pepper
to taste
Instructions
Toss first 6 ingredients in a bowl.
Add avocado, olive oil, lime juice, salt and pepper and toss lightly.
Serve with chips,on tortillas, or just plain.
