Pops was a great man. He passed away yesterday. But his memory will live on. Whether he was spreading cheer as a leprechaun or as Santa Claus, he was always there to give of himself, lift someone up that needed it, embarrass someone….you name it! Pops, we love you. Carry on. Barbecue Bacon Meatloaf
Ingredients
- BBQ Meatloaf

- Ingredients:
- 1 pounds and 1/ 2 ground beef
- 1 egg
- 1/3 cup barbecue sauce 1 tablespoon mixed in, remainder for topping, divided
- 1/2 cup bread crumbs
- 1 teaspoon mustard
- 1 teaspoon beef rub
- 1 splash worcestershire sauce
- 1/2 onion diced
- 1/2 red bell pepper diced
- 2 cloves garlic minced
- salt and pepper to taste
- 4 slices cooked bacon
Instructions

Preheat oven to 350 F.

Saute onion and pepper for 5 minutes, or until tender.

Mix meat, egg, 1 tablespoon bbq sauce, worcestershire, bread crumbs, mustard, beef rub, onion, bell pepper, garlic, salt and pepper.

Shape into loaf and place in pan.

Spread barbecue sauce on the top. Cover with strips of lightly cooked bacon.

Bake for 45-60 minutes or until thermometer registers 160 degrees.

Let rest for 5 minutes. Slice and serve.
