Easy Butterscotch Swirl Reese’s Peanut Butter Bars Recipe

A lot of you will probably remember on Pinterest awhile back seeing a lot of pins flying around for easy copycat Reese’s Peanut Butter Bars like these ones on Let’s Dish (and if you didn’t see them, where were you 😉 ?). I love me some Reese’s so I had to try ’em out, and let me tell you, YUM.

Butterscotch Reese's Peanut Butter Bars at foodapparel.comI usually keep my cupboard well-stocked with chocolate, but after I made these like five days in a row, I was starting to run a little low and needed to calm things down. So while rummaging through my cupboard for an alternative, I thought to myself, what about butterscotch? Butterscotch and peanut butter also go really well together. And that’s when my little variation on these beauties was born.

Now when I make a batch of these, I like to do about half chocolate and half butterscotch topping, just to mix it up a little, or even better, swirl the two together for this fun tiger tail pattern.  It’s still quick, looks pretty cool, and is equally delicious in my book!

Tigertail Butterscotch Reese's Peanut Butter Bars

Prep Time 15 minutes
Total Time 15 minutes

Ingredients

For the peanut butter filling:

  • 1 cup unsalted butter 2 cubes, melted
  • 2 cups finely processed graham cracker crumbs
  • 2 cups confectioners' sugar
  • 1 cup peanut butter

For the topping:

  • 1 1/2 cups butterscotch chips
  • 1/4 cup peanut butter
  • tablespoons About 2 chocolate chips

Instructions

For the peanut butter filling:

  1. In a medium mixing bowl, stir together the melted butter, graham cracker crumbs, confectioners' sugar, and peanut butter until uniformly combined, making sure to scrape the sides and the bottom to incorporate everything.
  2. Press evenly In a medium bowl, mix together the melted butter, graham cracker crumbs, confectioners' sugar, and 1 cup peanut butter until well blended.
  3. With fingers, press mixture into a 9x13 inch pan until evenly spread.

For the topping:

  1. In a small saucepan, over low heat, melt the butterscotch chips with the peanut butter, stirring occasionally, until smooth.
  2. Spread butterscotch topping over the peanut butter layer.
  3. In same pan, over low heat , melt the chocolate chips.
  4. Drop little dabs of the melted chocolate all over the butterscotch layer. Swirl using a knife or fork.
  5. Refrigerate until cooled and set (about one hour) before cutting into squares. (You may also cool them in the freezer to speed things up.)

Recipe Notes

Quick Tips:
To make this a truly quick treat, have graham cracker crumbs on hand by blending up graham crackers in a food processor, or using the good old-fashioned Ziploc bag and rolling pin method. I always process a good amount of graham cracker crumbs in advance and have them stored in my pantry for quick access.
Change it Up:
Do reverse colors by changing the base to chocolate and the embellishment to butterscotch.
Dress it Up:
Add a butterscotch layer AND a chocolate layer - slightly set the first layer before adding the additional layer. You can still add the swirl if desired!
