Nuts and Berries Spinach Salad at FoodApparel.com Summertime calls for berries in my house.  Lots of berries.  I mean serious 8 pounds downed in my house in three days.  Are you scared yet?  Don’t worry, I at least used a few pounds for freezer jam and to flavor up my lemonade.

I love throwing together a salad in a Tupperware for me to sneak a bowl of something healthy while the kids are napping.  Sometimes it is also convenient to just chop up a few Tupperwares of produce so I can mix and match what I throw in my salad.  This spinach salad is great because you can throw whatever you want in it.  I also LOVE this dressing.  It is so simple and makes my salad feel like a treat.

Nuts and Berries Spinach Salad

Ingredients

For the Salad:

  • Big handful of spinach
  • 1 tablespoon almonds toasted and chopped
  • ½ cup chopped berries strawberries/blackberries

For the Berry Salad Dressing:

  • ¼ cup canola oil
  • ¼ cup rice wine vinegar
  • ¼ cup sugar
  • 1 tablespoon poppyseeds
  • 1 tablespoon berry jam at room temperature

Instructions

For the Salad:

  1. Stack ingredients in bowl in desired order.

For the Dressing:

  1. Combine all ingredients in a closable container. Shake vigorously until jam dissolves.

Recipe Notes

Dress it Up:
Some other things we enjoy adding are bacon bits, pecans, apples, pears, mandarin oranges, avocados, cucumbers, and red onions.
Sweeten it up by throwing some sliced almonds into a skillet over medium heat with a little sugar (white or brown). Cook until toasted and caramelized, tossing occasionally to avoid burning, about 5 minutes.
