Mix up your boring old trail mix with this roasted pepitas, dried cranberries, and chocolate snack mix!
You know, this pregnancy has me in quite the snacking mood. It’s funny how each pregnancy can be so different! But yes, I seriously feel like I need to eat something about every 30 minutes in order to keep my tummy happy.
This can be dangerous though. I mean, obviously you gain weight during pregnancy, but I’m not in the mood to put on 20 pounds more than I should. That just seems like a lot of work after-the-fact, and I’d rather spend the time enjoying my new little one.
So, I’ve been on a mission to keep healthy snacks around. Good for me, good for the kids. Win-win! But I’ve been trying to mix it up a little from the same old stuff.
I posted awhile back about this company called Graze that sends snack boxes in the mail. Let me tell you, I love these guys and their stuff! Every little snack box that we get is full of fun and fresh ideas for snacking.
Only problem, as I mentioned…..not enough for the prego lady. So, what do I do? Well, recreate the yummiest ones in bigger quantities, of course! And hence this Roasted Pepitas Snack Mix!
This mix of pepitas (shelled pumpkin seeds), cranberries, and chocolate, is just yum. You see Graze also has this 80/20 concept. This means 80% healthy, 20% “yummy”. Or in other words, it’s okay to mix healthy with a little indulgence. Balance in all. This is my kind of thinking!
Graze serves their version (called the Florentine) with raw pepitas, but I decided to go ahead and roast them for a little more crunch. I honestly love it both ways – and I never really thought I even liked pumpkin seeds. But with this mix, it just works for me. It’s so easy to throw together and a nice different from your average trail mix. And I can still feel like I’m eating something healthy and get a little chocolate fix at the same time.
Roasted Pepitas (Pumpkin Seeds), Cranberries, and Chocolate Mix
Ingredients
- 1 cup pepitas pumpkin seeds
- 1/2 - 1 teaspoon oil optional
- salt optional, to taste
- 1/2 cup dark chocolate chips or chunks
- 1/2 cup dried cranberries
Instructions

Preheat oven to 350 degrees F.

Toss pepitas in a light coat of oil and then season with salt.

Cook 5 minutes. Stir.

Cook for an additional 3-5 minutes, or until seeds start to turn golden brown.

Remove from oven and cool completely.

Toss with chocolate and cranberries and enjoy your yummy snack!

Dress it Down:
Use raw pepitas instead of toasted.
