For a great start to your day, try these Healthy Apple Bran Muffins! They are loaded with flavor AND fiber – taste good and good for you!
I’m always working on recipes that I feel good about feeding to my family. Like, not that I don’t like feeding them delicious and fattening treats and eats, too, but if I don’t have a good balance, then I start feeling guilty. I want them to enjoy the whole spectrum and help them still learn how to take care of their body and eat healthy.
This Bran Apple Muffin Recipe can fit the bill of both healthy and yummy! Double win! This version is for mini muffins, so they are great for a light breakfast, snacks, just whenever. And aren’t muffins just cuter when they’re mini? This one’s been requested a lot so I wanted to get it up right away for y’all!
Healthy Apple Bran Muffin Recipe (Mini-Style)
Ingredients
- 1/4 cup oil canola, coconut, light olive
- 1 large egg
- 6 tablespoons honey
- 1/2 cup plain or vanilla greek yogurt
- 1/2 cup white wheat flour
- 1 cup wheat bran
- 1 medium to large apple peeled and shredded or diced into small cubes
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- pinch salt
- 1/2 teaspoon cinnamon
Instructions

Preheat oven to 350 degrees F.

Line a 24-inch mini muffin pan with butter/oil or muffin cups.

Mix oil, egg, and honey in a small mixing bowl.

Add flour, bran, baking powder, cinnamon, salt, and baking soda.

Mix until combined.

Add in shredded/diced apple and stir until combined.

Distribute evenly into pan and bake for 10-12 minutes, or until middle springs back.
