This sweet potato hash recipe is quick and flavorful and perfect for any time of year!
As you already know that I have a not-so-secret obsession with sweet potatoes, it should be no surprise to you that I once again have incorporated this fine veggie into a simple and delicious recipe, along with a smattering of other produce most of which you can usually find year ’round, although end of summer might bring you in the highest quality stuff.
This sweet potato hash is a keeper – good for any meal of the day any time of year, any type of mood. Srsly though.And also great in a time pinch. Another meal on the table in just about 30 minutes.

Sweet Potato Hash Recipe with Sausage and Avocado
Ingredients
- 2 large sweet potatoes peeled and diced into 1/2 inch cubes
- 1 tablespoon olive oil
- salt and pepper to taste
- 1 large red bell pepper diced into 1/2 inch squares
- 1 pound sausage (pork, turkey, chicken)
- 1 large avocado diced
Instructions

Preheat oven to 425 F.

Toss sweet potatoes in olive oil, salt and pepper.

Place sweet potatoes on sheet pan and roast in oven for 20 minutes. Flip them once after 10 minutes.

Meanwhile, place sausage on a skillet and cook thoroughly. If wrapped in casing, slice into bite sized pieces.

Add diced red bell pepper to sweet potatoes after 20 minutes. Roast for 5 more minutes. Remove from oven.

Toss sweet potatoes/pepper mixture, sausage and avocado lightly. Salt and pepper to taste.
