Years ago in Alabama I had a friend make a batch of peppermint flavored sugar cookies filled with chocolate. They were an absolute treat, so once I go the recipe from her I decided to add a little green dye so I could serve them to my kids while watching The Grinch.
You could take the green dye out and serve these as a little more sophisticated treat. Either way, they are fun, tasty, easy to make, festive, and original. Happy Holidays friends!
Chocolate Stuffed Peppermint Sugar Cookies
Ingredients
- 2 sticks unsalted butter room temperature
- 1 cup white sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon peppermint extract
- 3 1/2 cups unbleached all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 36-48 pieces chocolate of your favorite bar there are 12 segments in a Hershey's bar, so if using that, 3-4 bars
Instructions

Preheat oven to 350.

Cream butter and sugars together until fluffy, about 3-4 minutes.

Add eggs, one at a time, beating until smooth between each egg.

Mix in peppermint extract.

Add flour, baking soda, and salt. Mix until just combined.

Take one tablespoon of dough and squish it on the top of the piece of chocolate. Wrap the dough around the chocolate until the chocolate is completely covered in a thin layer of dough.

Bake cookies for 7-9 minutes.

Let rest on pan for five minutes before removing to cooling rack.
