These Chocolate Chip Cookie Dough Larabars are a nice cheat to feel like you are indulging!
I’m always looking for healthy snacks for my kids (and well, for me, too). So I was thrilled when I came across the idea of making Larabars – a great gluten-free energy bar that has just a few simple ingredients. These are so easy to whip up and taste great!
This version below is for chocolate chip cookie dough larabars, but there are so many different variations that you can do. The basic concept is to use finely processed nuts (such as cashews, walnuts, almonds, etc.) and then use dates as the “glue”. Vanilla extract helps round things out, and then the sky’s the limit for the additional add-ins. And you can easily shape them into bars or balls – whichever is more your style.

Copycat Cashew Chocolate Chip Cookie Dough Larabars
Ingredients
- 2 cups cashews
- 12-14 pitted dates
- 1 teaspoon vanilla extract
- 1/3 cup chocolate chips I like using miniature
Instructions

Blend cashews in food processor until grains are fairly small.

Add twelve dates and vanilla to food processor.

Process until mixture begins to clump together. Add an additional date or two if needed to help mixture stick together.

Add chocolate chips and pulse for a few seconds.

Place mixture in the bottom of an 8 inch square pan lined with parchment paper.

Top with another sheet of parchment paper and press down very firmly.

Store in fridge for up to three weeks.
Recipe Notes
Change it Up:
To make energy balls instead of bars, simply scoop out heaping tablespoons of the mixture and roll tightly.
