Every night needs a meal. On a busy week, especially during this holiday season, there are limits as to how much peanut butter and jelly, chicken nuggets, and cereal I can consume. ….which leads me to this sausage stir fry. It is very non-traditional. But my friends, it is so easy (especially if you buy pre-chopped vegetables)! And for a couple additional pluses, it’s healthy, and doesn’t dirty a mound of dishes.
So to my sister-in-law, I am forever grateful for this long time family favorite!
Sausage Stir Fry
Ingredients
- 1 tablespoon olive oil
- 1 pound cooked turkey or pork kielbasa
- 1 medium onion
- 1 pound broccoli
- 1 pound carrots peeled
- 1 pound yellow squash
- 1 large tomato
- 2 cups shredded Cheddar cheese
Instructions

Slice sausage into 3/4 inch pieces.

Dice onion, broccoli, carrots, squash, and tomato.

Heat 1 tablespoon olive oil, over medium heat, until it runs quickly in the pan.

Saute onion, sausage, broccoli, carrots and squash, tossing frequently, for about 15 minutes.

Top with tomatoes and cheese and remove from heat.

Serve over steamed rice with soy sauce.
