For a nice and healthy (yet tasty) breakfast recipe, to ring in the new year, try out this Brussels Sprouts. Red Pepper and Egg Breakfast Skillet!
It’s 2015! Yay! It seems like last year just flew by. We are so excited for this year – got a lot of fun stuff planned for ya’ll!
We thought we’d ring in the new year right by giving you another tasty breakfast skillet recipe. Perhaps you’ve seen our Sweet Potato Breakfast Skillet recipe floating around the web? It’s been a pretty popular one to our readers (and def in our houses).
This one is equally tasty. It features Brussels sprouts and red pepper and tastes fabulous! And if you want to de-healthify it (I know, all you peeps who kick against the pricks for “healthy” food – haha) then throw on some bacon and Romano cheese.
Brusels Sprouts, Red Pepper, and Egg Breakfast Skillet
Ingredients
- 3/4 pound to 1 Brussels sprouts
- 3 tablespoons olive oil divided
- 1 red pepper
- 3-4 large eggs
- cooked bacon optional
- Romano cheese optional
Instructions

Turn on oven broiler.

Wash and dice brussels in half (no need to dice if they are baby brussels).

Toss in 2 tablespoons olive oil, salt and pepper.

Place on sheet pan and broil (watching closely) for about ten minutes, tossing at least once during the process

Remove from oven when cooked and turn heat down to 375 degrees F.

While brussels are broiling, dice red pepper into half inch squares.

Place remaining tablespoon of olive oil in a skillet that can go in the oven and heat over medium until the oil moves quickly in the pan when tilted.

Place red pepper in pan and saute for 3-4 minutes.

Scoop brussels into the skillet with the peppers, and toss to mix.

Crack 3-4 eggs on skillet.

Place skillet in the oven for 5-10 minutes or until eggs are cooked the way you like them.

Sprinkle with bacon or cheese before serving (optional).

**.(Alternately to boiling, you can saute brussels over medium heat for 10-15 minutes, flipping regularly. After they are mostly cooked, add peppers to same pan, saute 2-3 minutes and add eggs.)

Forget the oven, just stir fry…just as good and much faster. I added ricotto cheese towards the end.
