It’s Spring and these Whole Grain Churro Waffles will make you want to SING!
Isn’t it just beautiful when the blossoms start creeping up from those first flowers? Hallelujah! I’ve just been in the mood and it’s such a great time of year. Easter coming around the corner, new life everywhere.
And with thoughts of Easter comes…..well, breakfast and brunch! AND WAFFLES. Ok, lots of other things, too, but I’m talking foodie style here. This is a food blog, right? I was having a fantabulous idea the other day and came across the idea of churro-i-fying my waffles (yes, that’s a word, k?) And boy, they are YUM.
A couple of things that make this recipe great – the buttermilk, and the white wheat flour. The buttermilk gives the waffles such a tender center, while still making sure the outside is nice and crisp. The flour, to health them up a little bit but keep it real for those who are afraid of the words: whole grain. If you don’t have this flour, it’s easy to substitute just general all-purpose flour, no prob.
So, without further adieu, a quick share of the latest creation that may just want to make it’s way into your home and heart this next week.
Whole Grain Churro Waffles
Ingredients
- 1 cup buttermilk
- 1 extra large egg
- 1/2 teaspoon vanilla
- 2 tablespoons butter melted
- 2 tablespoons sugar or maple syrup
- 1 cup white wheat flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- pinch of salt
- 1/4 teaspoon cinnamon
For the coating:
- 2 tablespoons butter melted
- 3 tablespoons sugar
- 1 teaspoon cinnamon
Instructions

In a large bowl, mix milk, egg, vanilla, butter, and sugar (or syrup).

Add flour, baking powder, baking soda, salt, and cinnamon. Mix until just combined.

Pour 2 tablespoons melted butter in separate bowl and set aside.

Mix cinnamon and sugar in a bowl large enough to dip waffles in and set aside.

Pour in 1/3 cup waffle mix into preheated and buttered waffle iron. Cook until crisped around edges.

Remove from waffle iron and brush immediately with butter and dip in cinnamon sugar mixture.
