I was playing around with homemade coconut milk the other day (recipe to come soon). I’m always looking for milk alternatives since in my family we tend to be a little lactose intolerant.
With Cinco de Mayo coming up tomorrow, I started daydreaming about Coconut Horchata. It sounded like a great combination: coconut, vanilla, cinnamon, with the creamy rice milk. Oh yeah. This was happening.
And guess what folks? It’s good. So if you want to enjoy something a little different and dairy-free, try out this Coconut Horchata! You are going to LOVE IT.
Dairy-Free Coconut Horchata Recipe
Ingredients
- 1 cup uncooked long grain white rice rinsed until water is clear
- 4 cups water
- 1/2 cup coconut milk
- ½ tablespoon vanilla extract
- ½ tablespoon cinnamon or 1 cinnamon stick
- 1/3 cup to 2/3 granulated sugar
Instructions

In a blender add cinnamon stick, rice and water. Let sit for 3-12 hours. Pulse for 10 seconds. Strain through strainer or nut bag.

Stir in vanilla, milk and sugar. Serve over ice with a pinch of cinnamon or a stick for garnish.
